One of the few examples of intentionally burning food.

Ingredients:
Leek Tops
Salt (optional)
Instructions:
1. Wash the leek tops, separate them and spread them out on a tray. Put the leek tops into a preheated oven at 220 °C and keep them in until black. If your oven has a fan, it will take around 20 minutes.
2. Once the leek tops are burned, blend them into a fine powder. You can mix the powder with salt and use it as seasoning, but this is optional. Keep the powder in an air-tight container at room temperature. Use the powder as a finishing touch on acidic dishes.
Notes:
You can make this ash by using the whole leek too.
Leeks can be replaced by onions as well.
If the powder gets moist, you can easily dehydrate it again and blend one more time.
