Leek Top Ash



One of the few examples of intentionally burning food.


Leek powder


Ingredients:

Leek Tops

Salt (optional)




Instructions:


1. Wash the leek tops, separate them and spread them out on a tray. Put the leek tops into a preheated oven at 220 °C and keep them in until black. If your oven has a fan, it will take around 20 minutes.

2. Once the leek tops are burned, blend them into a fine powder. You can mix the powder with salt and use it as seasoning, but this is optional. Keep the powder in an air-tight container at room temperature. Use the powder as a finishing touch on acidic dishes.



Notes:

  • You can make this ash by using the whole leek too.

  • Leeks can be replaced by onions as well.

  • If the powder gets moist, you can easily dehydrate it again and blend one more time.
